Recipe Feature: Coconut Shrimp

 

This is a fun, coastal recipe to make for family and friends. The flavors are rich, and savory. At our house, this is one of our favorite recipes. Enjoy!

Difficulty Level: Easy

Ingredients

1 lb. deveined uncooked shrimp, tail on
2 tbsp sesame oil
1 tsp. fish sauce
1 tsp fresh ginger
1/2 c. fresh cilantro, chopped
1 can unsweetened coconut milk, (14 oz)
1 tsp freshly squeezed lime
1/2 tsp lime zest
3 minced red or yellow peppers (for spicy, substitute for 1 diced jalepeno)
2 tsp freshly grated garlic
1 tsp salt, to taste
*optional – finely chopped peanuts

Method

Heat sesame oil in a skillet pan over medium heat. Stir in peppers, ginger and garlic. Gently add coconut milk and stir. Add cilantro. Add shrimp and cook until the shrimp are pink. Add a squeeze of fresh lime and a pinch of salt. Stir in fish sauce and taste.

Serve over jasmine rice with lime wedges, top with fresh cilantro (and chopped peanuts, if desired).
