This is a fun, coastal recipe to make for family and friends. The flavors are rich and savory. At our house, this is one of our favorite recipes. Enjoy!

Ingredients:
- 1 lb. deveined uncooked shrimp, tail on
- 2 tbsp sesame oil
- 1 tsp. fish sauce
- 1 tsp fresh ginger
- 1/2 c. fresh cilantro, chopped
- 1 can unsweetened coconut milk (14 oz)
- 1 tsp freshly squeezed lime
- 1/2 tsp lime zest
- 3 minced red or yellow peppers (for spicy, substitute 1 diced jalapeño)
- 2 tsp freshly grated garlic
- 1 tsp salt, to taste
- *optional – finely chopped peanuts
Method
Heat sesame oil in a skillet over medium heat. Stir in peppers, ginger, and garlic. Gently add coconut milk and stir. Add cilantro. Add shrimp and cook until the shrimp are pink. Add a squeeze of fresh lime and a pinch of salt. Stir in fish sauce and taste.
Serve over jasmine rice with lime wedges, top with fresh cilantro (and chopped peanuts, if desired).
